A Super Happy Cake is cake that is super happy. It appears that if the person making the dish is sad, like when Mung made one in Mung On The Rocks, the cake will turn out as a Super Sad Cake, although this could have been because Mung wasn't concentrating on what he was making or he was too sad to even want to make something as happy as a Super Happy Cake. Either way, it seems that the recipes for Super Happy and Super Sad Cakes aren't too different.
